Our Eels are absolutely magnificent. They are caught fresh and immediately prepared to be hot smoked in our original 1950 smoker. But first they are brined with a secret blend of herbs like thyme and ... some other herbs.
Eels have an amazing fat content that truly enhances the floral notes of the brine and the delicate smoke from our special blend of wood chips. The richness of the aromas and the firm texture of the meat turn the beast into a beauty.
Mix it into a pasta or a salad, or serve it simply with wholewheat toasts and some horseradish dip on top.
