This classic is the heart of our philosophy. It represents simplicity at its best. After a relaxing curing process with locally produced sea salt, it is smoked slowly with a special secret blend of wood chips at less than 20ºC to obtain that perfect sweet and salty balance with light smoky notes and a perfect firm, yet creamy texture. It goes wonderfully well with a nice cold flute of champagne or white wine. Should be sliced thinly and diagonally. To be served chilled.
