Cured with fine local sea salt and smoked slowly over our secret blend of wood chips, then hand-rubbed with dill, pepper and mustard seeds to bring out its floral and spicy side. This was Oma Eleonore's favourite - the same Hardy character, ready to serve straight from the fridge.
